Apple, berry & meringue

Apple, berry & meringue

[Serves 4]

1 tbsp butter
2 green apples, peeled, cored and chopped
½ tsp cinnamon
3 tbsp caster sugar
400g mixed berries, defrosted and drained, juice reserved
1 tbsp flour dissolved in reserved berry juice
½ cup ground almonds

For the topping

3 egg whites
1/3 cup caster sugar

1. Preheat oven to 180°C.  Heat a frying pan and add butter, apples, cinnamon and sugar. Cook until soft.
2. Add the berries and the berry juice mixture to the pan. Bring to the boil and reduce slightly. Stir in the almonds, remove from the heat and divide between 4 x 250ml ramekins.

In a bowl, beat egg whites until stiff. Add sugar and beat until thick and glossy. Spoon dollops onto each ramekin and bake for 10–15 minutes, or until golden.

This looks awesome! Made a copy and at my next girls get together this will be on the menu....ooohhh so looking forward to eating this!
