Macaroon and cranberry Eton mess

Whip this super-easy dessert together using  macaroons or store-bought meringues.

 
Macaroon and cranberry Eton mess

[Serves 8]

8 raspberry-flavoured macaroons
¾ cup frozen cranberries, defrosted, drained and roughly chopped
2 tbsp icing sugar
2 cups cream, whipped
Icing sugar for dusting

1 Roughly chop the macaroons and set aside.
2 In a bowl, mix together cranberries and icing sugar. Add macaroons and stir well to combine.
3 Layer the cream with the macaroon mixture in individual glasses and dust with icing sugar.

Tip:

If you can’t find macaroons, substitute with store-bought meringues.
