Sweet potato doughnuts

These sweet potato doughnuts are quick and easy to make.
[Serves 12]
1 egg, beaten
¼ cup sugar
1 tbsp soft butter
1 cup sifted flour
1½ tsp baking powder
Pinch salt
1/3 cup mashed sweet potato
¼ cup buttermilk
Sunflower oil for deep-frying
Maple syrup OR cinnamon and sugar for sprinkling
1 Beat together egg, sugar and butter.
2 Sift in dry ingredients then fold through sweet potato. Stir in buttermilk.
3 Heat oil. Drop in teaspoonfuls of mixture so that each doughnut has a little ‘tail’. Fry until golden brown then remove and drain on paper towel.
4 Drizzle with maple syrup or sprinkle with cinnamon and sugar.

Hi Alaine You can replace the buttermilk with yoghurt. Kind regards,crombieas
it does not say whether the sweet potato should be raw or cooked..normally vegetables are cooked when used in a "cake/sweet" recipe.FAIRLADY TEAM
