Sweet potato doughnuts

These sweet potato doughnuts are quick and easy to make.

 
Sweet potato doughnuts

[Serves 12]

1 egg, beaten
¼ cup sugar
1 tbsp soft butter
1 cup sifted flour
1½ tsp baking powder
Pinch salt
1/3 cup mashed sweet potato
¼ cup buttermilk
Sunflower oil for deep-frying
Maple syrup OR cinnamon and sugar for sprinkling

1 Beat together egg, sugar and butter.
2 Sift in dry ingredients then fold through sweet potato. Stir in buttermilk.
3 Heat oil. Drop in teaspoonfuls of mixture so that each doughnut has a little ‘tail’. Fry until golden brown then remove and drain on paper towel.
4 Drizzle with maple syrup or sprinkle with cinnamon and sugar.

it does not say whether the sweet potato should be raw or cooked..normally vegetables are cooked when used in a "cake/sweet" recipe.
