Sweet potatoes with goat's cheese

Sweet potatoes with goat's cheese

[Serves 4]

8 sweet potatoes
½ cup butter
7 sprigs thyme, leaves removed
200g cream cheese or chevin

1 Preheat the oven to 230ºC. Place the sweet potatoes on a baking sheet and bake for 40 minutes to one hour or until cooked through.
2 Remove the potatoes from the oven. Place the butter in a small pot and heat over a medium heat, swirling occasionally, until the white solids in the butter start turning golden brown. Add the thyme leaves to the saucepan and remove from the heat.
3 Cut a slit in the top of each sweet potato, fill with cream cheese, pour over the browned butter and serve.

Cook’s notes: If you can find them, use sweet potatoes with orange flesh – they are sweeter and look great.
