Delicious to enjoy as meal or a snack with a cool glass of wine.
FOR THE BATTER
1 tbsp baking powder
A pinch of salt
1½ cups cold soda water
1 medium head broccoli, cut into florets
3 courgettes, sliced into thick strips
1 red onion, cut into half moons
300g calamari rings
10 anchovy fillets
Oil for deep-frying
Sea salt and black pepper
1. In a large bowl sift together flour, baking powder and salt, make a well in the centre and add soda water. Whisk well to combine.
2. Heat oil in a pot, dip vegetables and fish into batter to coat and place in oil, remove after 2 minutes or until golden.
Drain on paper towel. Fry in batches until all the vegetables and fish have been battered and fried.
3. Season and serve immediately with garlic mayonnaise.
