Garlic and lemon linguine

If you've got the basics - pasta, garlic, lemons, Parmesan - all you need buy is some rocket and supper's nearly done

 
Garlic and lemon linguine

[Serves 4]

500g linguine
¼ cup olive oil
6 garlic cloves, finely chopped and slightly crushed with ½ tsp sea salt flakes
¼ cup fresh lemon juice
70g wild rocket
1/3 cup freshly grated Parmesan
sea salt flakes and freshly ground
black pepper

To serve:
extra Parmesan
extra-virgin olive oil

1 Heat the olive oil in a small pot over medium heat, add the garlic and cook, stirring, for a few minutes, until the garlic is softened and fragrant but without colour. Set aside.
2 Cook the linguine according to packet instructions, drain and return to the pot.
3 Add the garlic oil, lemon juice, rocket and Parmesan. Toss well, season and serve into bowls. Finish with a drizzle of olive oil and sprinkle some more Parmesan over the top. Eat immediately.
