No-rise pizza

A vegetarian pizza that only takes 20 minutes in the oven.

 
No-rise pizza

[Makes 2 pizzas]

2 cups self-raising flour
½ tsp salt
1 tsp sugar
25g butter
1 cup buttermilk

Toppings:
tomato passata
green pepper, sliced into rounds, seeds removed
mushrooms, sliced
black olives, pitted and halved
grated mozzarella
dried oregano

1 Preheat the oven to 200ºC. Sift the flour, salt and sugar into a bowl and rub in the butter with your fingertips. Mix in the buttermilk and knead in the bowl until it forms a dough.
2 Roll the dough out on a floured surface and cut to fit a heavy-based frying pan or a pizza tray.
3 Smear with tomato passata, add the toppings and sprinkle with oregano.
4 Bake for 20 minutes.

TIP: If you don't have a pizza pan, use a heavy-based cast-iron frying pan for the pizza
