Trout wrapped in newspaper
Only takes about 30 minutes on the braai.
2 trout, gutted and rinsed
Zest and juice of 4 lemons
1 cup olive oil
1 cup fennel fronds, finely chopped
1 cup parsley, finely chopped
2 tbsp ground fennel seed
2 tbsp sea salt
1 tbsp ground black pepper
2 fennel bulbs, thinly sliced
4 lemons, sliced
1 Mix together lemon zest and juice, olive oil, fennel fronds, parsley, fennel seed, salt and pepper.
2 Moisten a few sheets of newspaper – they should be damp but not sodden. Place 2 sheets of baking paper on top of the newspaper, arrange lemon slices in the centre and lay a trout on top.
3 Rub half the lemon mixture onto fish, inside and out. Stuff the cavity with sliced fennel bulb and lemon slices.
4 Wrap fish tightly in newspaper. Secure with string. Repeat with second trout.
5 Place on braai for approx 30 minutes. Remove newspaper and serve.
