Cuban-style corn cobs

Delicious served sprinkled with Parmesan, with lime wedges on the side.

 
Cuban-style corn cobs

[Serves 4]

4 corn cobs, husks and silks removed and washed well
ΒΌ cup good-quality mayonnaise
4 tsp tomato sauce
1 tsp cayenne pepper
1 wedge of Parmesan,
finely grated

To serve
lime wedges

  1. Mix together the tomato sauce, mayonnaise and cayenne pepper. Add the mielies to a pot of boiling salted water and parboil. Finish the mielies on the braai so they are browned and charred in places.
  2. While the mielies are still hot, brush with the mayonnaise mixture and sprinkle generously with the Parmesan.
  3. Serve immediately, with lime wedges for squeezing over.
